We rotate single origins throughout the year, typically sourcing from Central and South America and Africa. These coffees highlight origin character—fruit, florals, and acidity—while still being selected for balance and usability in cafés.
Decaf
Our decaf offerings are typically Swiss Water Process (SWP), though we occasionally source Ethyl Acetate (EA) decaf depending on availability and quality.
Swiss Water Process (SWP) is a chemical-free method that uses water, temperature, and time to remove caffeine while preserving origin flavor. It tends to produce a clean, smooth cup with classic coffee character.
Ethyl Acetate (EA) uses a naturally occurring compound derived from sugarcane or fruit to gently remove caffeine. EA decafs often have slightly more sweetness and fruit-forward notes.
Both methods are safe, widely accepted in specialty coffee, and chosen based on cup quality—not shortcuts.
