Featured here is our seasonal coffee from Chiapas, Mexico. This coffee comes from a single ejido from the interior highlands of Chiapas, Mexico. We worked with Jesus Salazar from Cafeologia of San Cristobal De Las Casas in sourcing this coffee. 60 kilos literally came back to the States in my suitcase.

In the cup, this coffee is very mellow. Chiapas is well known for everyday, easy drinking coffee. There's nothing exotic about this coffee, but you can expect excellent sweetness, well rounded body, and balanced acidity. It tastes nougaty, with a little milk chocolate. I don't want to call it Three Musketeers, but that's exactly what it tastes like. Check out our video and learn all about this phenomenal region. Later look up Jesus Salazar from Cafeologia and see what great work he and his team are doing for Chiapas and their coffee.
